Food & Cuisine in Ohrid
Macedonian cuisine has been influenced by numerous nations from the Mediterranean region and also by the Balkan countries. It has a long history of evolution of culinary delights, and Turkey and Greece have the strongest influence on the cuisine. Dishes which have their origins in Turkey are Burek, which is a flaky pie and has a filling of cheese, spinach and ground beef, and grilled beef kebabs, called kebapcinya locally. The well known baklava is another dish originating from the turkish cuisine.
When Macedonia decided to avoid the negative impact of urbanisation, it transformed into the agricultural core of the Balkans. Many generations have enjoyed the produce of the fertile soil. It is to be appreciated that such a small territory produces an amazing variety of grapes, citrus fruits and hazelnuts. It also grows rice, tobacco and various mountain teas. Indeed, Macedonia is the heartland of Balkan agriculture and has crops that grow both in Mediterranean climate and in Central European climates. Fruits and vegetables are also grown organically and the Macedonian tomatoes and peppers are legendary.
Macedonia is also a dairy producer. Macedonian cuisine uses sirenje, a white cheese which resembles the Greek feta. There is yet another variety of cheese - a yellow cheese called Kashkaval. It is akin to the Italian Locatello Romano. In every Macedonian village you will get unique and tasty varieties of cheese. Milk and yoghurt are also abundant.
Meat is an important part of the cuisine in Macedonian. Meats that are used include chicken, lamb, beef, and pork.
Local Delicacies
There are local specialties such as pindzur which is a cream salad with brinjal and peppers, and taratur which is basically yogurt with bits of cucumber. There are other Macedonian dishes like shopska salata which is a salad made of cucumber, sliced tomato, and onion, with ground white cheese; tavce gravce or baked beans; pastrmajlija which is a kind of pizza topped with meat and occasionally with egg; selsko meso which is champignon mushrooms and pork chops in a rich brown gravy, and ayvar, the national sauce made out of sweet red peppers.
Drinks in Ohrid
If you want to try out traditional alcoholic beverages in Macedonia, then opt for mastika and rakiya. On a hot summer day, try Boza which is a very refreshing drink. This was brought to Macedonia by the arrival of Turks and also has nutritive value. Other Macedonian drinks you can try are wines like Aleksandriya, T'ga za jug, Bovin and the local beer, Skopsko, which is popular with both tourists and locals alike.
Macedonian wine is quite popular and acknowledged worldwide for its unique taste. Try Vranec, the common Cabernet Sauvignon and the mellow Merlot. Today there are many local wineries that produce red and white wines which are comparable to French, Italian or Californian wines.
Ohrid Trout
Ohrid trout (Ohridska pastrmka) makes a delicious dish and most of the restaurants in Ohrid display this item on their menu cards. However, it is advisable not to consume this as you will be directly encouraging its illegal fishing along the Macedonian shores. Fishing for the Ohrid trout has been declared illegal as it is an ancient living fish and is in danger of extinction. There is also another trout species called Belvica which is also caught for consumption.
